What Are We Having for Dinner?

That's my question lately. Every day. I look at the menu I have planned and somehow I decide I don't want to make anything that is on it. On top of my lack of enthusiasm about what I have planned for dinner, I cannot seem to find time to make dinner and serve it in a timely fashion.

I'm in a total dinner slump.
Total and complete.

Then last night, I decided to make something that I was pretty sure my kids and dear husband would back away from in fear. It's Chicken Leek Soup. What are the ingredients you may ask? Well, you need chicken and leeks and rice. I know, I know. It's a lot of ingredients.

I boiled three chicken breasts in 2 quarts of water.
Then I shredded the chicken and put it back in the water.
Then I sliced up a whole leek thingie and added it. (I don't know what it's called. Bundle?)
Then I added salt, pepper, garlic powder, and parsley to taste.
I simmered that mixture for 30 minutes while I cooked rice.

To serve it, I put the rice in the bottom of each bowl, then put a ladle of the chicken/leek combo over it.

They all ate it.
Elijah asked for seconds.
He hates all green food except dried seaweed, but he ate spoonfuls of leeks.
I am still in shock.

I don't know what we're having for dinner tonight, but last night went pretty well and we actually ate before 7pm. And, of course the added bonus is, Elijah got some green veg for the year.
